Our cattle are pasture raised along with supplemental grain. Unlike USDA-graded supermarket beef, we use no hormonal growth stimulants, appetite enhancers or antibiotics. We think that it is unnecessary and potentially harmful to give drugs to healthy animals. We prefer them to be raised the "old-fashioned," natural way. Beef that is naturally raised and aged longer, produces beef of fine quality and tenderness normally only available in rancher's homes, or at fine restaurants. How to Order Freezer Beef
Orders for freezer beef can be placed for a whole, half, or a quarter. We will then take the animal to an inspected, certified meat processor. You will be responsible to communicate with the meat processor to decide on the different cuts and processing details on your order. You will be notified when your order is ready for pick-up.
How much meat will I get?
With an average market (live) weight of 1,150 lbs and the average yield of 62.2%, the typical steer will produce a 715 lb. (dressed weight) carcass. The dressed beef (or carcass) will yield approximately 569 lbs. of red meat and trim (take home meat). This is roughly a yield of 80% from the dressed or hanging weight - this is for a VERY LEAN Beef. A High Quality, USDA Choice Beef will yield approximately 70% of the Hanging or Dressed Weight. The yield on the take home meat weight from the live weight of the steer is approximately 50%. Here is a breakdown of the amounts of take-home meat:
- Chuck (Blade Roasts and Steaks, Ground Beef and Stew Meat, Arm Pot Roasts and Steaks, Cross Rib Pot Roast) - 31%= approx. 176 lbs.
- Round (Top Round, Bottom Round, Tip, Rump, Ground Beef) - 22%= approx. 125 lbs.
- Thin Cuts (Flank Steak, Pastrami Squares, Outside Skirt, Inside skirt, Boneless Brisket, Ground Beef and Stew Meat) - 20%= approx. 114 lbs.
- Short Loin (Porterhouse Steak, T-bone Steak, Strip Steak, Sirloin Steak, Tenderloin Steak, Ground Beef and Stew Meat) - 16%= approx. 91 lbs.
- Rib (Rib Roast, Rib Steak, Short Ribs, Ground Beef and Stew Meat) - 10%= approx. 57 lbs.
- Miscellaneous (Kidney and Hanging Tender) - 1%= approx. 6 lbs.
